Our first side dish recipe is: Simple Spiced Baked Carrots.
Talk about YUM. We used cute little carrots but really you can do whatever. Just cut the carrots up if they are massive. Coz massive carrots will take way too long to bake (we all want the quick factor right?!).
- 1 kg (2 lb) carrots (chop them if they are too big)
- 1/2 lemon cut into wedges
- 1 tbs. macadamia oil
- 1 tbs. fresh dill chopped
- 1 tsp. cumin
- 1 tsp. turmeric
- 1/2 tsp. cinnamon
- salt and pepper
- Preheat oven to 180°C (350°F) and line 2 baking trays with baking paper.
- In a bowl add the carrots, oil, spices and a little salt and pepper.
- Lay out the carrots onto the baking trays and pop them into the oven for about 40 minutes.
- Turn and cook for a further 10 minutes or until cooked to your liking.
- Top with dill. YUM!
- Merrymaker tip: Serve with feta cheese for extra delish factor!
- 500 g (1 lb.) brussel sprouts, cut in half, outer leaves chucked
- 4 rashers (slices) bacon chopped
- 3 shallots (scallions) sliced
- 1 clove garlic crushed
- 1 tbs. butter
- water
- In a large fry pan fry up the bacon on high heat. Once cooked take out of the pan and set aside.
- Add the butter to the pan (along with the delish bacon fat) and stir fry the brussel sprouts for about 5 minutes.
- Add the garlic and shallots and cook for a further 3 minutes.
- Add the bacon back to the pan and fry for another minute or until everything is cooked to your liking.
- Merrymaker tip: Feel free to add other greens to this delish side dish! Broccoli seems like a great idea!

- 1 cauliflower cut into florets
- 1/4 cup grated parmesan cheese (more if you want!)
- 1/4 cup crushed almonds
- 1 tbs. macadamia oil
- salt and pepper
- Preheat oven to 180°C (350°F) and line a baking tray with baking paper.
- Lay the cauliflower onto the tray, drizzle with oil and season with salt and pepper.
- Cook for 30 minutes.
- Turn and sprinkle with grated cheese and pop back into the oven for another 10 minutes.
- Once cooked to your liking top with crushed nuts!
- Oh... yeh... yum!
- We think cumin would be a great addition to this delish side dish! AH YUM!
