Healthy apple banana loaf

STUFF YOU NEED

medium ripe bananas mashed
2
small apples peeled and chopped
about a cup

cups
blanched almond meal

(4.4 oz) butter melted
or coconut oil/ghee

eggs

100% vanilla extract
NOW WHAT
Preheat oven to 180°C (350°F) and line a 20cm x 10 cm (8 x 4 inch) loaf tin with baking paper.
In a small bowl mash your bananas, add your chopped apple to the bowl and set aside for now.
In another large bowl add the almond meal.
Add the butter, vanilla, mashed bananas and apple to the large bowl with the almond meal and stir until combined (taste test here).
Finally add the eggs and mix once again until combined.
Transfer the mixture into prepared tin and place into the oven for 30 minutes or until golden brown.
Take out of the oven and allow to cool completely before you turn out and slice.
Serve warm with extra butter and a sprinkle of roasted nuts!
MERRYMAKER TIP
This loaf freezes really well... but it never lasts too long.
