600 g (1 lb. 3 oz.) white fish cut into large chunks
3green onions chopped
2zucchinis sliced
1broccoli head cut into florets
1clove garlic crushed
1lime juiced
1red chilli sliced
1 1⁄2 cups coconut milk (canned)
2 cm (1 inch) piece ginger grated
2tspcumin
1tspturmeric
NOW WHAT
Preheat oven to 180°C (350°F).
In a large casserole dish add the coconut milk, lime juice, ginger, chilli, garlic, spices and stir well.
Now add the veggies and stir to coat them in the curry mix. Place into the oven for 10 minutes.
Add the fish to the casserole dish and season with salt and pepper. Cover and place back into the oven for 15 minutes or until the fish is cooked and flakes away.
Enjoy as is or with rice, quinoa, extra veggies.
