Double chocolate keto fat bombs

We were meal prepping last Sunday, baking up a stack of roast veggies and of course, whipping up a healthy sweet treat (yes, this is part of meal prep!). We made these amazing double chocolate keto fat bombs… and they were that good we had to put the easy recipe on the blog (and on the Get Merry App)!

Anyway, back to the magic of these double chocolate keto fat bombs! We love having a stash of low carb healthy treats in the freezer through the working week. They also make the most perfect post Pilates or Yoga snack.

You can definitely skip the double choc layer BUT this little step makes them that much extra special! And although, it seems messy and fiddley… it’s super easy!

Double Chocolate Keto Fat Bombs

STUFF YOU NEED

FOR THE FAT BOMB BALLS

  • 1 cup shredded coconut
  • 1 cup blanched almond meal
  • 1/4 cup nut butter we used almond
  • 1/4 cup raw cacao powder
  • 2 tbs coconut oil
  • 2 tsp monk fruit sweetener (or rice malt/other sweetener)
  • 1 tsp vanilla

FOR THE CHOC COATING

  • 1/2 cup coconut oil
  • 1/4 cup raw cacao powder
  • 2 tsp monk fruit sweetener (or rice malt/other sweetener)
  • 1 tsp vanilla

NOW WHAT

  • Start with the balls! Place all the ball ingredients in a blender and whiz until a butter forms.
  • Roll mixture into small balls, place on a tray with baking paper in a single layer and place in the freezer for 5 minutes. Meanwhile! Make the chocolate.
  • Rinse your blender, add all the chocolate ingredients and blend on slow speed and increase slowly until you get the most magical liquid chocolate. Pour choccy mix into a bowl.
  • Grab your balls, using a spoon pick up each individual ball then dip the ball into the chocolate. Place ball back on the same tray.
  • Once all fat bomb balls are dipped into chocolate place back into the freezer for 5 minutes. SO EASY!
  • Eat a fat bomb! Then, transfer all remaining fat bombs into a container and store in the freezer (the chocolate will melt if left out!).

We drizzled ours with extra nut butter... because why not?!
