Easy Paleo Chocolate Mousse – how we’re kicking one new year goal in the butt!

One of our new year goals is to create a better relationship with the paleo sweet treats we eat (scroll down for our easy paleo chocolate mousse recipe). That sounds odd, let us expand on that. Being food bloggers definitely has its perks. We’re always trying new foods + get to enjoy really really delicious food… but the downside? Well, someone’s got to eat all that food! So when we make a raw cake, or banana bread we feel it’s our responsibility to ensure none of the sweet treat gets ‘wasted’ (it’s like a game, we could call it: ‘how fast can 2 girls eat a whole paleo cake?’). You would think we would use our initiative + pop it in the freezer for a later date but for some reason we just don’t think of that at the time + end up eating the whole darn thing to ourselves… oops. And YES the sweet treat is 100% paleo but a whole cake is never a very healthy option. Merrymaker first world problem #78.

Day 3 into the new year + we are doing pretty well! By no means are we going cold turkey with our sweet treats (that would just be too sad) but we’ve come up with some strategies that seem to be working a treat! The most successful so far is the ‘creating one serve paleo sweet treat’ strategy. Yep, instead of making a whole cake, we just make little mini sweet treats… this means there’s no going back for seconds… because there are no seconds! We shared a paleo 1 minute mug cake on Facebook which you can check out here but it’s our easy paleo chocolate mousse that has been on the menu this week, you can whip it up in 10 minutes + it tastes seriously naughty… but it ain’t! stuff you need
  1. 1 avocado
  2. 2 tsp. vanilla extract
  3. 1 tbs. Natvia (or your preferred natural sweetener)
  4. 3 tbs. raw cacao powder
  5. 2 tbs. almond milk
now what
  1. In a blender or food processor (we use our Vitamix) whiz all ingredients together until smooth.
  2. Divide the mousse into 2 separate cups + refrigerate for 10 minutes.
