We always loved nachos growing up but this pulled beef nachos recipe is the ultimate in healthy dinners! It’s super easy to make and it’s grain free, refined sugar free and paleo!

Also, we really went for it with this recipe! We made the cashew cheese and everything! Which is so yellow and fun. But if you eat cheese feel free to swap to real cheese. And on that note, if you feel like corn chips feel free to serve with corn chips. 

Oh we really do love corn chips. We still eat them every now and then because of the next level yum factor. We get it, they’re not the best thing for us as they are super processed but they are SO YUM.  And we love sweet potato chips but they lack the crunch factor and they are a tad hard to dip into yum stuff (like pulled beef and guacamole haha).

FOR THE BEEF
  1. 1 kg (2 lbs ) sirloin steak (or whatever beef is on sale)
  2. 1 onion diced
  3. 1 clove garlic crushed
  4. 1⁄2 cup stock or bone broth
  5. 1 tsp paprika
  6. 1 tsp cumin
  7. 1⁄2 tsp chilli powder
  8. salt and pepper
SERVE WITH
  1. 600 g (1 3 lbs ) sweet potato peeled and sliced
  2. 2 tomatoes diced
  3. 1 red onion diced
  4. 1 avocado mashed
  5. 3 tbs fresh chopped coriander
  6. 1 tbs coconut oil
  7. 1 tsp paprika
  8. salt and pepper
CASHEW CHEESE
  1. 1⁄2 cup raw cashews (soaked overnight then drained)
  2. 1 clove garlic crushed
  3. 1⁄2 lemon juiced
  4. 3 tbs olive oil
  5. 3 tbs water
  6. 1 tsp turmeric
  7. salt
NOW WHAT
  1. Start with the beef. Place all the beef ingredients into the slow cooker, stir around to combine then cook on low for 8 hours When you turn on the slow cooker, also start soaking your cashews!
  2. Once the beef is cooked, pull apart with 2 forks to shred. Talk about yum
  3. About an hour before the beef is ready preheat the oven to 180°C (350°F) and line 2 baking trays with baking paper.
  4. In a large bowl add the sweet potato slices, coconut oil, paprika and a little salt and pepper.
  5. Stir well to coat the potato in spices and oil.
  6. Lay the sweet potato slices onto the baking trays and bake for about 25 minutes, turn and bake for another 10 minutes or until nice and crunchy.
  7. While the chippies cook, place all ingredients for the cashew cheese into a food processor or blender.
  8. Whiz until super dooper smooth (SO YUM!).
  9. Place a layer of chips, top with beef, tomatoes, onion, avo, cashew cheese and fresh coriander.
MERRYMAKER TIP
  1. If you eat corn chips swap the sweet potato for natural corn chips. Oh and cheese is always a good idea if your tummy likes it!
