Ingredients
  1. ¾ cup coconut oil
  2. 1 cup cacao
  3. ½ cup rice malt syrup (you can also use raw honey or maple syrup)
  4. 2/3 cup almond meal
  5. ½ cup chopped macadamia nuts
  6. ½ cup dried goji berries
  7. ½ cup coconut flakes
  8. Himalayan salt
Instructions
  1. Combine the coconut oil with the cacao, rice malt syrup and almond meal to make your chocolate base. We use our Vitamix to get it nice and smooth.
  2. Stir the macadamias, goji berries and coconut flakes into the chocolate base.
  3. Pour the mixture into a small baking tray or plate lined with baking paper.
  4. Sprinkle with a good pinch of salt and put it into the freezer to set – it’ll be ready in about 10 minutes.
  5. Break or cut it into chunks and keep it in the fridge.

  1. Thanks for the recipe. Looks delish. I just have a question about using rice malt syrup and coconut oil. When I do this they do not combine completely, even when heated. I end up with little lumps of syrup. Any hints?

  2. We actually find that if you blend all the ingredients together on a high speed it doesn’t separate!Let us know how you go! e + c

  4. OMG Just made this. Subbed 1/2 macadamias with home toasted hazelnuts, toasted the coconut flakes too and added a few broken frozen raspberries. THIS IS GORGEOUS.
    Going to have to keep it in the freezer I think otherwise I will be too tempted to eat it all at once (to stop it going off obviously!)

  5. I just made this with woolies maple syrup – it taste too good. Is normal maple syrup ok or is there a raw one that you should use?

    Hi Erin! That sounds DELISH! Just make sure you’re using 100% natural maple syrup – check the ingredient list, sometimes they sneak in hidden nasties! e + c

  7. Hi There! I have just discovered thus site and thought I’d give thus recipe a go. I absolutely love it and my husband keeps going back for more…. but…. it didn’t set! I am keeping it in the freezer otherwise it flops and slopes. I forgot the salt but that wouldn’t be it. .. any ideas?
