We’ve made the easiest low carb peanut butter cup recipe.

Our friend Maddy (who is one of our most favourite humans in the world) has been whipping up healthy peanut butter cups… and lucky us, we got to sample. They were so freaking yum that we were inspired to make our own low carb peanut butter cup recipe.

As you most probably know, nothing beats the combination of peanut butter and chocolate. However, we know peanuts are a common allergen so feel free to swap to almond butter, cashew butter, macadamia butter… you get it… any nut butter. 

We love these kinds of recipes, the ones where you can just chuck all the ingredients into a couple of bowls, mix and freeze. They are the easiest of all healthy treat recipes and this is why you will find a huge variety of easy raw treats on the Merrymaker blog and Get Merry App.

Another reason why we love these low carb peanut butter cups is that they make the best afternoon work snacks. We made a big batch at the start of the week and then stored in the freezer for a week of delicious PB cup afternoons. We LOVE our jobs, but everything is better with healthy raw treats… are we right, or are we right?

Low carb peanut butter cup recipe

Total Time45 minutes
Servings: 12

STUFF YOU NEED

FOR THE CHOC LAYER

  • 1/3 cup peanut butter
  • 4 tbs coconut oil melted
  • 1 1/2 tbs erythritol (or natural sweetener of choice)
  • 2 tbs raw cacao powder
  • 1 tsp 100% vanilla extract

FOR THE PB FILLING

  • 1/3 cup peanut butter
  • 3 tbs coconut oil melted
  • 1 tbs erythritol (or natural sweetener of choice)
  • 1 tsp 100% vanilla extract

NOW WHAT

  • Prepare 12-16 patty cases and place onto a tray. Get two bowls out.
  • Place all ingredients of the choc layer into one. Mix until combined and smooth.
  • Place all ingredients of the PB layer into the other. Mix until combined and smooth.
  • Evenly spoon the choccy layer into the prepared patty cases.
  • Evenly spoon the PB layer on top of the choccy layer.
  • Place into the freezer for 30 minutes or until fully set.
  • Enjoy! Keep these stored in an airtight container in the freezer to avoid eating them all at once!
