Uhh huh, yeah we did! We made gluten free upside-down apricot cake and it’s seriously the goods.

We actually made this for Emmy’s birthday breakfast we had the other week, yeah, cake for breakfast is totally a thing in Merrymaker Land… especially when it’s birthday breakfast!

But if you’re thinking, um, Merries, you cray for having cake for brekky, then you should make this for your next morning or afternoon tea! It will impress all your friends, not just because it looks so darn pretty but the taste is next level. It’s all kinds of apricotty sweetness.

And we know everyone hates this word but the cake is moist. There, we said it.

STUFF YOU NEED
  1. 1 1/2 cups blanched almond meal
  2. 1 cup coconut milk (canned)
  3. 125 g (4 1/2 oz.) butter softened
  4. 1/2 cup coconut flour
  5. 1/4 cup erythritol (or natural sweetener of choice)
  6. 10 apricots halved and pitted
  7. 3 eggs whisked
  8. 2 tsp. 100% vanilla extract
  9. 1 tsp. baking powder
NOW WHAT
  1. Preheat oven to 160°C (320°F) and line a 20 cm (8 inch) springform cake tin with baking paper.
  2. First of all, evenly place the apricot halves into the base of the cake time, leave this for now.
  3. In a large mixing bowl place the almond meal, coconut flour, sweetener and baking powder.
  4. Mix until combined.
  5. Add the coconut milk, butter, eggs and vanilla.
  6. Mix really well until the batter is smooth.
  7. Transfer the mixture in to the prepared tin (the batter is quite thick) and place into the oven for 40 minutes or until golden brown.
  8. It may seem a little soft when you take it out but once you let it cool completely it will settle and become this delicious, amazing cake!
  9. Once cool, carefully turn out the cake.
  10. If your cake is a little light on top, place it under the grill for 5 minutes (sometimes this can happen with the apricots!).
