I don’t know about you but for me eating chocolate for breakfast is pretty much living the dream.

After years of eating super dull food in the pursuit of ‘getting healthy’ I am now the healthiest and strongest I have ever been. I’m over the dreaded bloat, crazy bowel habits, IBS and imbalanced hormones. It’s pretty funny to think NOW I also eat chocolate pudding for breakfast. Funny but so awesome!

But as a fellow Merrymaker, I am pretty sure you’re already on board with the whole dessert equals breakfast thing – right?

I love this chocolate and maca chia pudding recipe because:

  • It’s super quick to make – under 5 minutes!
  • You can make it vegan, paleo, keto, sugar free, gluten free and dairy free.
  • It tastes really good. I made it for my man, who is suspicious of all things ‘healthy’. He is now obsessed.
  • Did I mention… it’s like having dessert for breakfast.

PLUS, it’s packed with good stuff!

Chia seeds are a fab source of protein, omega 3 fatty acids which are anti-inflammatory, fibre to help keep gut healthy and so much more. Maca is great for energy and has been known to support hormonal health and cacao is one of the BEST sources of magnesium out there.

STUFF YOU NEED
  1. 150 ml (5 fl. oz.) coconut/almond/oat milk (carton)
  2. 3 tbs. chia seeds
  3. 2 tsp. cacao powder
  4. 1 tsp. maca powder
  5. ¼ tsp. stevia OR tsp. of sweetener of choice
  6. pinch of salt
  7. berries, banana and nut butter for toppings (optional)
NOW WHAT
  1. In a bowl, add the chia seeds, salt, cacao, maca powder and stevia.
  2. Stir in the milk thoroughly and leave in the fridge for about 5 minutes.
  3. Top with berries, banana, nut butter or desiccated coconut.
  4. Eat and enjoy.
TIP
  1. On the run? Make it in a jar, plonk the lid on it and take with with you as you run out the door!
