Espresso Smoothie

We have a feeling you are going to love this espresso smoothie! We were once obsessed with smoothies and smoothie bowls. Even in the middle of a Canberra winter, we were still drinking cold icy smoothies, yes we were obsessed! Since then we had a massive break from our favourite breakfast option. But for the past week it’s been hot here on the Gold Coast, so smoothies are back! 

This refreshing espresso smoothie is super quick to make and extra delicious to drink! And hello, espresso… we vote yes!

This recipe is a milky icy smoothie but feel free to add some yoghurt or ice cream to thicken it up and make it a little more substantial. You could even add a frozen banana and make a banana coffee flavoured smoothie! YUMMMM!

We use coconut milk because it’s our favourite bu7t feel free to swap to any variety. Whether it’s cow’s milk, almond or oat. They all taste good!

When we make this espresso smoothie we brew our coffee on the stovetop, but you could also use instant coffee. Dissolve a tsp. of instant in a little boiling water then simply add to the blender.

Espresso Icy Smoothie

Prep Time5 minutes
Servings: 2

STUFF YOU NEED

FOR THE SMOOTHIE

  • 2 cups coconut milk (carton)
  • 1 cup ice
  • 2 tbs. nut butter
  • 2 shots coffee
  • 1 tsp. cacao nibs optional

NOW WHAT

  • Place all ingredients (except the cacao nibs) into a blender and whiz until smooth.
  • Top with cacao nibs to make it pretty and add some crunch!

MERRYMAKER TIP

Feel free to add some yoghurt or ice cream to make it thicker and a little more filling.
