- 3 eggs
- 2 cups grated carrot (about 2 large carrots)
- 1 1/2 cups blanched almond meal
- 1 cup coconut milk (canned)
- 1 cup walnuts chopped finely
- 1/2 cup coconut flour
- 1/2 cup coconut oil or butter softened
- 1/3 cup rice malt syrup or honey
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. 100% vanilla extract
- 1/2 cup coconut or natural yoghurt
- 1/4 cup butter or coconut oil softened
- 1 lemon (juice and rind)
- 1 tbs. rice malt syrup or honey
- 1 tsp. 100% vanilla extract
- Line a 20 x 10 cm (8 x 4 inch) loaf tin with baking paper and preheat oven to 180°C (350°F).
- Peel and grate the carrots, squeeze out any excess liquid from the carrots using a tea towel. Set aside for now.
- In a large mixing bowl combine all dry ingredients: almond meal, walnuts, coconut flour, baking powder and cinnamon.
- In another bowl, mix together the wet ingredients: eggs, coconut milk, coconut oil, rice malt syrup and vanilla.
- Carefully pour the wet ingredients into the dry ingredients and mix together well.
- Add the carrot and mix again until combined.
- Transfer into the prepared loaf tin and place into the oven for 50 minutes or until brown.
- Allow to cool completely before turning out and drizzling yummy icing on top!
- Place all ingredients into your blender and whiz on low speed until combined and smooth. You can also use a mixing bowl and wooden spoon.
- You can freeze separate slices, then defrost when ready for yummy healthy carrot and walnut loaf! Toast it up and add some butter! YUM!
