Our all time favourite healthy, quick and easy lunch has got to be last night’s dinner leftovers. When we cook for 2 we prepare enough for 4 and as we serve out our dinner plates we serve out lunch in containers and pop them straight into the fridge.
Not only do we get a delicious lunch but it also helps with portion control. Win win! And this is exactly how we plan the delicious meals in our Make Life Merry Challenge! This is what our lunch leftovers look like (yours can too!).
But we all have those days where we:
a. eat the dinner leftovers (oops)
b. can’t be bothered to cook dinner so have a smoothie/omelette instead
c. don’t make quite enough food
d. buy/cook up a dinner that wasn’t very healthy
We’ve definitely been in all a, b, c, d situations, but we have go to healthy, quick and easy lunch ideas for these situations.
Here’s our Healthy, Quick and Easy Lunch Ideas
Canned tuna/salmon (in spring water or olive oil)
Add some baby spinach and avocado. Drizzle with apple cider vinegar and olive oil (if you need extra). Seriously YUM.
Hard boiled eggs
Add lettuce, cherry tomatoes, raw almonds and avocado. Squeeze fresh lemon juice over… YUM!
Grab a bunch of veggies
Cut them up, snack on them with nuts and avocado.
Paleo bread with avocado
You can even buy this from stores or make your own with this easy recipe.
Make a day of it and go out to a cafe for lunch
Order a delicious salad with grilled/baked protein! YUM. Checkout our guide to eating healthy when you’re out.
Smoothie instead
Liquid lunch is a-ok if it’s THIS delicious smoothie!
