Paleo 5 Minute Blueberry Mousse.

Our Paleo 5 Minute Blueberry Mousse is the perfect paleo sweet treat recipe when you need (aka want) a sweet treat fast! It’s also the perfect recipe to use instead of ice cream! Not to mention it is a really cool looking sweet treatโ€ฆ EXTREMELY purple! We first shared our mousse over on Paleo Cupboard (we love Amy and we LOVE her recipes!).

Enjoy our Paleo 5 Minute Blueberry Mousse as is or we imagine it would be pretty amazing served on top of some paleo baked goodies! Like our Caramel Date Slice or Choc Raspberry Ganache cake… that would be like choc berry drool-worthiness overload!

stuff you need
  1. 1 cup raw cashews
  2. 2 cups frozen blueberries
  3. ยฝ cup full fat coconut milk
  4. 3 tbs. coconut oil
  5. 1 tbs. maple syrup
  6. 1 tsp. 100% vanilla extract
  7. Optional topping
  8. Fresh blueberries
  9. Shaved paleo chocolate
Now what
  1. Place all of the ingredients (except the berries) in to your blender or food processor (we use our Vitamix).
  2. Whiz for 3 minutes or until super smooth.
  3. Now add your frozen berries and whiz for another minute. It will start to instantly turn in to this amazing blueberry frozen mousse!

  1. Do u ever just get over coconut cream? It gets sickly with me after a while n sits heavily in my stomach. I wish there was an alternative cream replacement.

  2. I really want to give this recipe a go Merrymaker Sisters! Would macadamia, hazel or pecan nuts work as a substitute for cashews? So sad that cashews are high-FODMAP, I do love them! Thanks so much xx

    Do you think you could pop this back in the freezer like ice cream? New to paleo and not sure how well coconut cream freezes.

    Hi Lisa! It will go really hard so we’d recommend you freeze it in small portions so you can let it defrost for at least 10 mins before you eat it :):)But otherwise they are perfect for freezing! You could also try all of our raw cakes as well! Skip the base for a more mousse/ ice cream treat! DELISH!
